Pork Chops
4 bone-in or boneless pork chops (¾–1 inch thick)
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon paprika
½ teaspoon garlic powder
½ teaspoon onion powder
2 tablespoons olive oil (for searing)
Onions & Gravy
2 large yellow onions, thinly sliced
2 cloves garlic, minced
1 cup chicken broth
1 tablespoon Worcestershire sauce
1 teaspoon soy sauce (adds depth, optional)
1 teaspoon dried thyme or rosemary
2 tablespoons butter
1 tablespoon cornstarch + 2 tablespoons water (optional, for thickening)
Fresh parsley, chopped (for garnish)
Step-by-Step Instructions
1. Season the Pork Chops
Pat pork chops dry and season both sides with:
Salt
Pepper
Paprika
Garlic powder
Onion powder
This creates flavor before slow cooking (very important).
2. Sear for Flavor (Highly Recommended)
Heat olive oil in a skillet over medium-high heat
Sear pork chops 2–3 minutes per side until golden brown
Transfer pork chops to the slow cooker

3. Build the Onion Base
Spread sliced onions evenly over the pork chops
Add minced garlic
Dot onions with butter
As it cooks, the onions will soften and turn sweet.
4. Make the Cooking Liquid
In a bowl, whisk together:

Worcestershire sauce
Soy sauce
Thyme or rosemary
Pour evenly over pork and onions.
5. Slow Cook
Cover and cook:
LOW for 6–7 hours (best texture)
or HIGH for 3–4 hours
Pork should be very tender but not falling apart.
6. Thicken the Gravy (Optional)
If you want thicker gravy:
Mix cornstarch + water
Stir into slow cooker
Cover and cook on HIGH for 15–20 minutes
