Slow Cooker Pork Chops and Onions

Ingredients (Serves 4)

Pork Chops

  • 4 bone-in or boneless pork chops (¾–1 inch thick)

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon paprika

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • 2 tablespoons olive oil (for searing)

Onions & Gravy

  • 2 large yellow onions, thinly sliced

  • 2 cloves garlic, minced

  • 1 cup chicken broth

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon soy sauce (adds depth, optional)

  • 1 teaspoon dried thyme or rosemary

  • 2 tablespoons butter

  • 1 tablespoon cornstarch + 2 tablespoons water (optional, for thickening)

  • Fresh parsley, chopped (for garnish)


Step-by-Step Instructions

1. Season the Pork Chops

Pat pork chops dry and season both sides with:

  • Salt

  • Pepper

  • Paprika

  • Garlic powder

  • Onion powder

This creates flavor before slow cooking (very important).


2. Sear for Flavor (Highly Recommended)

  1. Heat olive oil in a skillet over medium-high heat

  2. Sear pork chops 2–3 minutes per side until golden brown

  3. Transfer pork chops to the slow cooker

🔥 This step locks in juices and adds deep flavor.


3. Build the Onion Base

  • Spread sliced onions evenly over the pork chops

  • Add minced garlic

  • Dot onions with butter

As it cooks, the onions will soften and turn sweet.


4. Make the Cooking Liquid

In a bowl, whisk together:

  • Chicken broth

  • Worcestershire sauce

  • Soy sauce

  • Thyme or rosemary

Pour evenly over pork and onions.


5. Slow Cook

Cover and cook:

  • LOW for 6–7 hours (best texture)

  • or HIGH for 3–4 hours

Pork should be very tender but not falling apart.


6. Thicken the Gravy (Optional)

If you want thicker gravy:

  1. Mix cornstarch + water

  2. Stir into slow cooker

  3. Cover and cook on HIGH for 15–20 minutes


7. Finish & Serve

  • Taste and adjust salt/pepper

  • Sprinkle with fresh parsley

  • Spoon onions and gravy over pork chops
