Crispy Potato Sticks (Potato Fingers)

3 medium potatoes (starchy ones like Russet work best)

3 tbsp cornstarch (key for crispiness)

2 tbsp all-purpose flour

1 tsp salt (adjust to taste)

½ tsp black pepper

½ tsp garlic powder (or very fine garlic paste)

½ tsp onion powder (optional)

1–2 tbsp finely chopped coriander / parsley

Water (as needed)

Oil for deep frying
Step 1: Prepare the Potatoes

Peel the potatoes.

Grate them finely or mash until completely smooth.

Place grated potato in a clean cloth and squeeze out as much water as possible.
🚨 This step matters — excess moisture = soggy sticks.
Step 2: Make the Dough

Add squeezed potato to a bowl.

Add:

Cornstarch

Flour
-
Salt
-
Pepper
-
Garlic powder

Herbs
-

Mix well.

Add very little water, just enough to form a soft but firm dough.
🧠Dough should be smooth and non-sticky, not loose.
Step 3: Shape the Sticks
You have 2 options:
Option A: Piping Bag (best shape)

Put dough in a piping bag (or plastic bag with corner cut)

Pipe long sticks directly onto parchment or plate
Option B: Hand-Roll

Take small portions

Roll into thin finger-sized sticks
Try to keep them even thickness so they fry evenly.
Step 4: Frying (Very Important)

Heat oil on medium heat (not too hot).

Gently add sticks in batches.

Fry slowly for 3–4 minutes, stirring gently.

Once they float and start turning golden, increase heat slightly.

Fry until deep golden and crisp.
🔥 Frying too fast = raw inside.
Step 5: Drain & Finish

Remove sticks onto a wire rack or paper towel.

Sprinkle a pinch of salt or chaat masala while hot (optional).
