Homemade Matcha Ice Cream (Ultra Creamy)

Homemade Matcha Ice Cream (Ultra Creamy)

Flavor profile

  • Creamy, rich vanilla base

  • Earthy, slightly bitter matcha balance

  • Not too sweet (restaurant-style)

Ingredients (about 1½ quarts)

Ice Cream Base

  • 2 cups heavy cream

  • 1 cup whole milk

  • ¾ cup granulated sugar

  • ¼ tsp salt

  • 2 tbsp culinary-grade matcha powder
(ceremonial grade works too but costs more)

  • 4 large egg yolks

  • 1 tsp vanilla extract

Step-by-Step Instructions (Custard Style)

1. Whisk the Matcha

  1. In a small bowl, whisk matcha with 2–3 tbsp warm milk until completely smooth.

  2. No lumps — this step is key to that silky green color.

2. Heat the Dairy

  1. In a saucepan, combine:

    • Heavy cream

    • Remaining milk

    • Sugar

    • Salt

  2. Heat over medium until steaming (not boiling).

  3. Whisk in the smooth matcha mixture.

3. Temper the Egg Yolks

  1. Whisk egg yolks in a separate bowl.

  2. Slowly pour ½ cup hot cream mixture into yolks while whisking.

  3. Pour everything back into the saucepan.

4. Cook the Custard

  1. Cook on low–medium heat, stirring constantly.

  2. Custard is ready when it coats the back of a spoon (170–175°F).

  3. Do not let it boil.

5. Strain & Chill

  1. Strain through a fine mesh sieve.

  2. Stir in vanilla.

  3. Cool completely (fridge, at least 4 hours or overnight).

6. Churn

  1. Churn in ice cream maker according to manufacturer instructions.

  2. Texture should be soft-serve consistency.

7. Freeze & Scoop

  1. Transfer to container.

  2. Freeze 4–6 hours until firm.

  3. Scoop and place on a foil-lined tray like the photo if pre-scooping.
