This layered honey-lime chicken rice stack is a restaurant-style meal made at home. Juicy, caramelized chicken sits on fluffy rice, creamy avocado mash, sweet corn, and hearty black beans—finished with a glossy honey-lime glaze. It’s colorful, filling, and perfect for lunch, dinner, or special plating.


🛒 Ingredients (Serves 2–3)

For the Chicken

  • 2 boneless chicken breasts (or thighs)

  • 1½ tbsp olive oil

  • 1 tsp paprika

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp black pepper

  • ½ tsp salt

  • ½ tsp chili flakes (optional)

Honey-Lime Glaze

  • 3 tbsp honey

  • 2 tbsp soy sauce

  • 1 tbsp lime juice

  • 1 tsp vinegar or apple cider vinegar

  • ½ tsp cornstarch + 2 tbsp water (optional, for thickness)

Rice Layer

  • 1 cup white rice (basmati or jasmine)

  • 2 cups water

  • ½ tsp salt

  • 1 tsp butter or olive oil

Avocado Layer

  • 1 large ripe avocado

  • 1 tbsp lime juice

  • Salt to taste

  • Black pepper to taste

Corn & Bean Layer

  • ½ cup sweet corn (boiled or canned, drained)

  • ½ cup black beans (rinsed & drained)

  • ¼ tsp cumin

  • ¼ tsp paprika

  • Salt to taste

Garnish

  • Lime wedges

  • Fresh parsley or cilantro, chopped


👩‍🍳 Instructions

1️⃣ Cook the Rice

  • Rinse rice well.

  • Add rice, water, salt, and butter to a pot.

  • Bring to a boil, cover, and simmer on low for 12–15 minutes.

  • Fluff and set aside.


2️⃣ Prepare the Chicken

  • Flatten chicken slightly for even cooking.

  • Rub with olive oil, paprika, garlic powder, onion powder, salt, pepper, and chili flakes.

  • Heat a skillet over medium heat and cook chicken 5–6 minutes per side until golden and cooked through.

  • Remove and rest.


3️⃣ Make the Honey-Lime Glaze

  • In the same pan, add honey, soy sauce, lime juice, and vinegar.

  • Simmer for 2–3 minutes.

  • Add cornstarch slurry if you want a thicker sauce.

  • Return chicken to pan and coat well until glossy.


4️⃣ Prepare the Layers

  • Avocado: Mash avocado with lime juice, salt, and pepper until creamy.

  • Corn & Beans: Warm corn and black beans in a pan with cumin, paprika, and salt for 2–3 minutes.


5️⃣ Assemble the Stack

  • Place a round mold or bowl on the plate.

  • Layer rice first and press gently.

  • Add corn & black bean mixture.

  • Spread avocado mash evenly.

  • Slice chicken and place on top.

  • Drizzle extra honey-lime sauce around and over.
