Apple Oat Pancakes (Healthy & Fluffy)

Ingredients

1 cup rolled oats

1 cup milk (dairy or plant-based)

2 medium apples, peeled & grated

2 eggs
-
1 tsp baking powder
-
½ tsp cinnamon (optional but recommended)

1 tbsp honey, maple syrup, or sugar (optional)

1 tsp vanilla extract (optional)

Pinch of salt
-
Oil or butter for cooking
Instructions
1. Soak the Oats

In a bowl, mix oats and milk

Let soak 10–15 minutes until soft
(or blend lightly for smoother texture)
2. Prepare the Batter

Add eggs to soaked oats
-
Add grated apples (squeeze lightly if very juicy)

Add baking powder, cinnamon, salt, vanilla, and sweetener
-
Mix until well combined
The batter should be thick but pourable.
3. Heat the Pan

Heat a non-stick pan over medium heat

Lightly grease with oil or butter
4. Cook the Pancakes

Spoon batter onto pan (about 2–3 tbsp per pancake)

Cook 2–3 minutes until bubbles appear

Flip and cook 2 more minutes until golden
5. Serve
Stack and serve warm with:

Tips for Best Results

Grate apples finely for soft pancakes

Don’t cook on high heat (they brown fast)
