Apple Oat Pancakes (Healthy & Fluffy)

Makes

10–12 small pancakes


Ingredients

  • 1 cup rolled oats

  • 1 cup milk (dairy or plant-based)

  • 2 medium apples, peeled & grated

  • 2 eggs

  • 1 tsp baking powder

  • ½ tsp cinnamon (optional but recommended)

  • 1 tbsp honey, maple syrup, or sugar (optional)

  • 1 tsp vanilla extract (optional)

  • Pinch of salt

  • Oil or butter for cooking


Instructions

1. Soak the Oats

  • In a bowl, mix oats and milk

  • Let soak 10–15 minutes until soft
    (or blend lightly for smoother texture)


2. Prepare the Batter

  • Add eggs to soaked oats

  • Add grated apples (squeeze lightly if very juicy)

  • Add baking powder, cinnamon, salt, vanilla, and sweetener

  • Mix until well combined

The batter should be thick but pourable.


3. Heat the Pan

  • Heat a non-stick pan over medium heat

  • Lightly grease with oil or butter


4. Cook the Pancakes

  • Spoon batter onto pan (about 2–3 tbsp per pancake)

  • Cook 2–3 minutes until bubbles appear

  • Flip and cook 2 more minutes until golden


5. Serve

Stack and serve warm with:

  • Honey or maple syrup

  • Yogurt

  • Fresh apple slices or nuts


Tips for Best Results

  • Grate apples finely for soft pancakes

  • Don’t cook on high heat (they brown fast)

  • Add chopped nuts or raisins for texture


Variations

  • Blender version: Blend all ingredients smooth

  • No eggs: Replace with 1 mashed banana

  • Air fryer: 170°C / 340°F for 8–10 minutes

  • High protein: Add 1 scoop vanilla protein powder
