Greek Grilled Chicken Bowl with Tzatziki (Serves 2–3)

Components

  • Marinated grilled chicken

  • Lemon herb rice

  • Creamy tzatziki sauce

  • Fresh veggie toppings

  • Warm pita


1. Greek Chicken Marinade & Grill

Ingredients

  • 1½ lbs boneless, skinless chicken thighs (juicier than breast)

  • 3 tbsp olive oil

  • 2 tbsp fresh lemon juice

  • 3 cloves garlic, minced

  • 1½ tsp dried oregano

  • 1 tsp paprika

  • ½ tsp cumin

  • ½ tsp salt

  • ¼ tsp black pepper

  • Optional: pinch of chili flakes

Instructions

  1. Whisk all marinade ingredients together.

  2. Toss chicken in marinade, coat well.

  3. Marinate at least 30 minutes, ideally 2–12 hours (game changer).

  4. Grill on medium-high heat:

    • 5–6 min per side until nicely charred

    • Internal temp: 165°F (74°C)

  5. Rest 5 minutes, then slice.

🔥 Pro tip: If no grill, use a cast-iron skillet—same heat, same char.


2. Lemon Herb Rice (the base)

Ingredients

  • 1 cup long-grain rice (basmati or jasmine)

  • 2 cups chicken broth (or water)

  • 1 tbsp olive oil or butter

  • Zest of 1 lemon

  • 1 tbsp lemon juice

  • 2 tbsp fresh dill or parsley, finely chopped

  • Salt to taste

Instructions

  1. Rinse rice until water runs clear.

  2. Cook rice with broth and olive oil per package instructions.

  3. Fluff with fork.

  4. Stir in lemon zest, lemon juice, herbs, and salt.

🍋 This rice should taste bright, not heavy.


3. Tzatziki Sauce (don’t skip this)

Ingredients

  • 1 cup full-fat Greek yogurt

  • ½ large cucumber, grated

  • 1 clove garlic, finely grated

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • 1–2 tbsp fresh dill, chopped

  • Salt to taste

Instructions

  1. Grate cucumber and squeeze out all water (very important).

  2. Mix everything together.

  3. Chill at least 15 minutes for flavor to bloom.

🥒 Thick, garlicky, herby = perfect.


4. Fresh Toppings (as seen in the bowl)

  • Cherry tomatoes, halved

  • English cucumber, sliced

  • Red onion, thinly sliced

    • Optional: soak in cold water 10 min to mellow bite

  • Crumbled feta cheese

  • Fresh dill or parsley for garnish


5. Pita

  • Warm 1–2 pita breads

  • Optional: brush lightly with olive oil and toast


6. Assemble the Bowl

  1. Spoon lemon rice into bowl.

  2. Add sliced grilled chicken.

  3. Drizzle generously with tzatziki.

  4. Add tomatoes, cucumber, onion, and feta.

  5. Sprinkle herbs on top.

  6. Serve pita on the side (or tear and dunk 😌).


Optional Add-Ons (if you wanna level up)

  • Kalamata olives

  • Roasted chickpeas

  • Pickled red onions

  • Extra lemon squeeze over chicken

  • Hot sauce or harissa for heat
