🧾 Ingredients

🥬 Filling

  • 2 cups spinach (fresh, finely chopped)
    or 1½ cups frozen spinach, thawed & squeezed dry

  • ½ cup feta cheese (crumbled)

  • ¼ cup mozzarella or ricotta (optional, for creaminess)

  • 1 small onion (very finely chopped)

  • 2 garlic cloves (minced)

  • 1 tbsp olive oil

  • Salt (to taste)

  • ½ tsp black pepper

  • ½ tsp dried oregano or dill

  • Pinch of nutmeg (optional but authentic)

🥐 Pastry

  • 1 sheet puff pastry or phyllo dough (thawed if frozen)

  • 2 tbsp melted butter or olive oil (for brushing)

🥚 For Brushing

  • 1 egg (beaten)

  • Sesame seeds or nigella seeds (optional)


👩‍🍳 Step-by-Step Instructions

1️⃣ Prepare the Spinach Filling

  1. Heat olive oil in a pan.

  2. Sauté onion on medium heat until soft (2–3 min).

  3. Add garlic, cook 30 seconds.

  4. Add spinach and cook until wilted and moisture evaporates.

  5. Turn off heat and let cool slightly.

  6. Mix in:

    • Feta

    • Mozzarella/ricotta (if using)

    • Salt, pepper, oregano, nutmeg

👉 Filling should be dry, not watery.


2️⃣ Prepare the Pastry

  1. Roll out puff pastry into a rectangle.

  2. Cut into long strips (about 3 inches wide).

  3. Brush lightly with melted butter or oil.


3️⃣ Shape the Triangles

  1. Place 1–2 tbsp filling at one end of the strip.

  2. Fold diagonally to form a triangle.

  3. Keep folding (like a flag) until the end.

  4. Seal edges gently.

Repeat for all strips.


4️⃣ Brush & Top

  • Place triangles on a baking tray lined with parchment.

  • Brush tops with beaten egg.

  • Sprinkle sesame or nigella seeds.


🔥 Baking Instructions

🔹 Oven

  • Preheat to 200°C / 400°F

  • Bake for 20–25 minutes

  • Until golden brown and puffed

🔹 Air Fryer

  • Preheat to 180°C / 350°F

  • Air fry 10–12 minutes

  • Flip halfway if needed
