4 large eggs
4 oz (about ½ cup) cream cheese OR mascarpone
2 tbsp heavy cream
2 tbsp unflavored collagen peptides (optional, for extra fluff & protein)
1 tbsp butter (melted)
½ tsp baking powder (optional — some carnivores skip this, but it makes them puffier)
Pinch of salt
Butter or ghee for cooking

Blend the batter
Add eggs, cream cheese, heavy cream, collagen (if using), melted butter, baking powder, and salt to a blender.
Blend until smooth and airy.
Cook the pancakes
Heat a nonstick skillet over medium-low heat.
Grease with butter or ghee.
Pour small rounds of batter (they rise better when not oversized).
Cook 2–3 minutes per side until golden and fluffy.
Stack & serve
Stack high and serve warm.
Top with butter, whipped cream, or even a dollop of mascarpone for a true carnivore treat.
