🥒 Homemade Cucumber Sandwiches
Ingredients (Makes 8 small sandwiches)

1 medium cucumber (thinly sliced)

8 slices soft white or whole wheat sandwich bread (crusts removed, optional)

3 tbsp cream cheese (softened) OR butter

1 tbsp mayonnaise (optional, for extra creaminess)

1 tsp fresh dill (finely chopped) OR ½ tsp dried dill

½ tsp lemon juice

Salt & black pepper, to taste
Instructions
Step 1 – Prepare the Cucumber

Wash and thinly slice the cucumber (use a mandoline for even slices).

Lightly sprinkle slices with salt, place on paper towels for 10 minutes to remove excess moisture. Pat dry.
Step 2 – Make the Spread

In a small bowl, mix cream cheese (or butter), mayo (if using), dill, lemon juice, salt, and pepper.

Spread this mixture evenly on one side of each bread slice.
Step 3 – Assemble the Sandwiches

Arrange cucumber slices in a single layer on 4 slices of bread.

Top with the remaining slices, cream cheese side down.

Gently press, then cut into triangles or finger-sized rectangles for serving.
