Cottage Cheese Banana Bread Recipe

Ingredients:

  • 1 cup cottage cheese

  • 2 large ripe bananas

  • 2 eggs

  • 1 ½ cups oat flour (or blended oats)

  • 1–2 tbsp honey or maple syrup (optional)

  • 1 tsp baking powder

  • 1 tsp vanilla extract

  • ½ tsp cinnamon

  • Pinch of salt

Instructions:

  1. Preheat oven to 350°F (175°C). Line a loaf pan with parchment.

  2. Add cottage cheese, bananas, eggs, honey, and vanilla to a blender. Blend until smooth.

  3. In a bowl, mix oat flour, baking powder, cinnamon, and salt.

  4. Pour the blended mixture into the dry ingredients and mix gently.

  5. Pour batter into the loaf pan and smooth the top.

  6. Bake for 45–55 minutes, or until a toothpick comes out clean.

  7. Let cool completely before slicing. Enjoy soft, high-protein banana bread!
