Savory Rolled Meat & Cheese Flatbread

Dough / Flatbread
2 large thin flatbreads or lavash
(you can also use stretched pizza dough)
Meat Filling
½ lb (225 g) ground beef (or lamb)
1 small onion, very finely minced
2 cloves garlic, minced
1 tsp paprika
½ tsp ground cumin
½ tsp black pepper
¾ tsp salt
2 tbsp tomato paste
2 tbsp fresh parsley or green onions, chopped
Cheese Layer
1½ cups mozzarella or Kashkaval, shredded
(mozzarella for stretch, Kashkaval for flavor)
Topping (optional but recommended)
1 egg, beaten
1 tbsp olive oil
Extra chopped parsley
🔪 Prepare the Filling
In a bowl, combine ground meat, onion, garlic, paprika, cumin, pepper, salt, tomato paste, and parsley.
Mix until evenly combined.
(The mixture is spread raw — it cooks fully in the oven.)
🌀 Assemble the Roll
Lay flatbread on a work surface.
Spread a thin, even layer of the meat mixture across the entire surface.
Sprinkle cheese evenly on top.
Starting from one edge, roll tightly into a log, like a jelly roll.
Place seam-side down on a lined baking tray.
🔥 Bake
Preheat oven to 375°F (190°C).
Brush the roll with beaten egg mixed with olive oil.
Bake for 30–35 minutes, until:
Deep golden brown
Cheese is bubbling
Inside is fully cooked
Optional: Broil for 1–2 minutes for extra crispiness.

Rest for 5 minutes
Slice into thick rounds
Sprinkle with parsley
