Blueberry Breakfast Quesadilla — Full Recipe

Ingredients

  • 1 large flour tortilla
  • 1/3 cup cream cheese or Greek yogurt
  • 1–2 tbsp honey or maple syrup
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/2 cup fresh or frozen blueberries
  • Butter or cooking spray for the pan
  • Optional: powdered sugar, extra honey, or granola for topping

Instructions

  1. In a bowl, mix cream cheese (or yogurt) with honey, cinnamon, and vanilla.
  2. Spread the mixture over half of the tortilla.
  3. Add the blueberries on top and fold the tortilla in half.
  4. Heat a pan over medium heat with a little butter or spray.
  5. Cook the quesadilla 2–3 minutes per side until golden and lightly crisp.
  6. Slice into wedges.
  7. Optional: drizzle with honey, dust with powdered sugar, or top with granola for crunch.
