Poor Man’s Stew
Ingredients
- 1 lb ground beef (or substitute with turkey)
- 4 medium potatoes, diced
- 3 carrots, sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 cup beef broth (or water + 1 bouillon cube)
- 2 tbsp tomato paste
- 1 tsp paprika
- 1 tsp dried thyme
- 1 tsp salt (adjust to taste)
- 1/2 tsp black pepper
- 1 tbsp cooking oil
Instructions
- Brown the beef:
Heat oil in a pot. Add ground beef and cook until browned. Drain excess fat if needed. - Add onion & garlic:
Stir in chopped onion and garlic, sauté until softened. - Add vegetables:
Add diced potatoes and sliced carrots and mix well. - Add tomatoes & broth:
Stir in diced tomatoes, tomato paste, and beef broth. - Season:
Add paprika, thyme, salt, and pepper. Mix everything together. - Simmer:
Bring to a boil, then lower heat, cover, and simmer for 30–40 minutes, stirring occasionally, until potatoes and carrots are tender. - Adjust seasoning:
Add more salt, pepper, or broth if needed. - Serve:
Enjoy warm with bread, rice, or on its own.
Tips
- Add peas or corn for extra veggies.
- For a thicker stew, mash a few cooked potatoes and stir in.
- Use canned potatoes/carrots for a faster version.
