Poor Man’s Stew 

Ingredients

  • 1 lb ground beef (or substitute with turkey)
  • 4 medium potatoes, diced
  • 3 carrots, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth (or water + 1 bouillon cube)
  • 2 tbsp tomato paste
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1 tbsp cooking oil

Instructions

  1. Brown the beef:
    Heat oil in a pot. Add ground beef and cook until browned. Drain excess fat if needed.
  2. Add onion & garlic:
    Stir in chopped onion and garlic, sauté until softened.
  3. Add vegetables:
    Add diced potatoes and sliced carrots and mix well.
  4. Add tomatoes & broth:
    Stir in diced tomatoes, tomato paste, and beef broth.
  5. Season:
    Add paprika, thyme, salt, and pepper. Mix everything together.
  6. Simmer:
    Bring to a boil, then lower heat, cover, and simmer for 30–40 minutes, stirring occasionally, until potatoes and carrots are tender.
  7. Adjust seasoning:
    Add more salt, pepper, or broth if needed.
  8. Serve:
    Enjoy warm with bread, rice, or on its own.

Tips

  • Add peas or corn for extra veggies.
  • For a thicker stew, mash a few cooked potatoes and stir in.
  • Use canned potatoes/carrots for a faster version.
