Hearty Veggie Casserole 

Ingredients

Vegetables

  • 1 head broccoli, cut into florets
  • 1 head cauliflower, cut into florets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 green Spanish onion, chopped
  • 1 cup chopped Spanish leaves (optional)

Egg Mixture

  • 4 large eggs
  • 1/2 cup milk
  • 1/4 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat Oven:
    Set oven to 400°F (200°C).
  2. Prepare Vegetables:
    In a large bowl, toss broccoli, cauliflower, bell peppers, cherry tomatoes, Spanish onion, and Spanish leaves with olive oil, Italian seasoning, salt, and pepper.
    Spread vegetables evenly in a large baking dish.
  3. Roast Vegetables:
    Bake for 20 minutes until veggies begin to soften.
  4. Mix Egg Batter:
    In another bowl, whisk eggs, milk, flour, salt, and pepper until smooth.
  5. Combine:
    Remove vegetables from oven and pour the egg mixture evenly over them.
  6. Bake Again:
    Return to oven and bake for 20–25 minutes until the casserole is set and lightly golden.
  7. Serve:
    Let cool slightly, slice, and enjoy warm.

Tips

  • Add cheese on top (mozzarella, cheddar, or feta) for a richer casserole.
  • Add cooked chicken or beans for extra protein.
  • Great for meal prep — stores 3–4 days in the fridge.
