Spicy Carrot Relish (Jar-Style)

Ingredients

2 kg (about 4½ lb) carrots, peeled and grated (medium grate)

2–3 red bell peppers, finely chopped

3–4 green chilies, finely chopped (adjust to taste)

1 cup vegetable oil

½ cup vinegar (white or apple cider)

3 tbsp sugar
-
2 tbsp salt (or to taste)

1 tbsp paprika
-
1 tsp chili flakes
-
1 tsp ground black pepper
-
1 tsp coriander powder
-
½ tsp turmeric
-
4 cloves garlic, minced
-
½ cup fresh parsley or cilantro, finely chopped
Instructions
1️⃣ Prep the Vegetables

Grate the carrots and place them in a large bowl.

Add chopped bell peppers, green chilies, garlic, and herbs.

Toss well to combine.
2️⃣ Make the Dressing

In a saucepan, heat the oil over medium heat.

Add paprika, chili flakes, black pepper, coriander, and turmeric.

Stir for 30 seconds (don’t burn).

Add vinegar, sugar, and salt.

Simmer for 2–3 minutes, then remove from heat.
3️⃣ Combine

Pour the hot dressing over the carrot mixture.

Mix thoroughly until everything is evenly coated.
4️⃣ Rest & Store

Let cool completely.

Pack tightly into clean, dry jars.

Refrigerate for 24 hours before eating (flavor improves daily).
