Crispy Roast Pork Sandwich with Creamy Herb Sauce & Pickled Red Slaw

INGREDIENTS

🥩 Roast Pork

  • 2–2½ lb pork loin (or pork shoulder if you want it juicier)

  • 2 tbsp olive oil

  • 1½ tsp salt

  • 1 tsp black pepper

  • 1 tsp smoked paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp dried thyme or rosemary

  • Optional: ½ tsp fennel seeds (very traditional for pork)


🥬 Pickled Red Slaw

  • 1½ cups shredded red cabbage (or pickled red onions)

  • ½ cup apple cider vinegar

  • 1 tbsp sugar

  • ½ tsp salt

  • Optional: ½ tsp mustard seeds or caraway seeds


🥄 Creamy Herb Sauce (Bottom & Top Spread)

  • ¾ cup mayonnaise

  • 2 tbsp sour cream or Greek yogurt

  • 1 small garlic clove, finely grated

  • 1 tbsp finely chopped chives or green onion

  • 1 tsp Dijon mustard

  • 1 tsp lemon juice

  • Salt & pepper to taste


🥖 To Assemble

  • 4 soft white sandwich rolls or buns (bolillo, hoagie, or Kaiser)

  • Butter or oil for toasting


INSTRUCTIONS


1️⃣ Pickle the Red Slaw (Do This First)

  1. Combine vinegar, sugar, and salt in a bowl.

  2. Add cabbage/onions and toss well.

  3. Let sit at room temp for 30–60 minutes (or refrigerate overnight).

👉 This cuts the richness of the pork and sauce perfectly.


2️⃣ Season the Pork

  1. Pat pork completely dry.

  2. Rub all over with olive oil.

  3. Mix spices and coat pork evenly.

Optional but recommended:
Wrap and refrigerate overnight for deeper flavor.


3️⃣ Roast the Pork

  1. Preheat oven to 400°F / 205°C.

  2. Place pork on a rack or in a roasting pan.

  3. Roast for 45–60 minutes, until internal temp reaches:

    • 145°F / 63°C (juicy, slightly pink)

  4. For extra crispy edges:

    • Broil for 3–5 minutes at the end.

🔥 Rest the pork 10–15 minutes before slicing.


4️⃣ Make the Creamy Herb Sauce

Mix all sauce ingredients until smooth.
Taste and adjust salt, lemon, or mustard.

Texture should be thick but spreadable, like in the photo.


5️⃣ Slice the Pork

  • Slice thinly across the grain.

  • You want juicy centers + crispy browned edges.


6️⃣ Toast the Bread

  • Lightly butter or oil the cut sides.

  • Toast in a pan or oven until just golden.


🧱 ASSEMBLING THE SANDWICH (Important)

  1. Bottom bun → thick layer of creamy herb sauce

  2. Stack generous pork slices

  3. Add pickled red slaw

  4. Optional extra drizzle of sauce

  5. Top bun → light sauce spread

Press gently. Admire. Devour.


🔥 Pro Tips

  • Pork shoulder = richer, pork loin = cleaner slices (pictured looks like loin)

  • Add crispy pork crackling bits if you want chaos

  • Amazing with fries or a sharp mustard on the side

  • Leftover pork reheats best in a hot pan, not microwave
