🥗 Avocado & Hard-Boiled Egg Green Salad

🧾 Ingredients (Serves 2–3)

Salad:

  • 3 large eggs

  • 2 ripe avocados, diced

  • 3 cups fresh baby spinach (or mixed greens)

  • 2 tbsp red onion, thinly sliced

  • 2 tbsp fresh parsley or chives, finely chopped

Dressing:

  • 3 tbsp extra-virgin olive oil

  • 1 tbsp fresh lemon juice (or apple cider vinegar)

  • 1 small garlic clove, finely minced (optional)

  • Salt, to taste

  • Freshly ground black pepper, to taste


🍳 Instructions

1️⃣ Hard-Boil the Eggs

  • Place eggs in a saucepan and cover with cold water

  • Bring to a boil, then cover and turn off heat

  • Let sit 10–12 minutes

  • Transfer to ice water, peel, and slice into halves or quarters


2️⃣ Prep the Vegetables

  • Wash and dry spinach thoroughly

  • Dice avocados into bite-size cubes

  • Thinly slice red onion

  • Chop herbs

💡 Tip: Toss avocado with a few drops of lemon to prevent browning


3️⃣ Make the Dressing

  • In a small bowl, whisk together:

    • Olive oil

    • Lemon juice

    • Garlic (if using)

    • Salt & pepper

Taste and adjust acidity or seasoning


4️⃣ Assemble the Salad

  • In a large bowl, add spinach, onion, and herbs

  • Gently fold in avocado

  • Add sliced eggs on top


5️⃣ Dress & Finish

  • Drizzle dressing over salad

  • Toss very gently to avoid breaking avocado

  • Finish with extra cracked black pepper


✨ Optional Add-Ins

  • Cherry tomatoes

  • Feta or goat cheese

  • Toasted pumpkin seeds or almonds

  • Dijon mustard (½ tsp) in the dressing

  • Chili flakes for heat 🌶️
