🥗 Avocado & Hard-Boiled Egg Green Salad
🧾 Ingredients (Serves 2–3)
Salad:
3 large eggs
2 ripe avocados, diced
3 cups fresh baby spinach (or mixed greens)
2 tbsp red onion, thinly sliced
2 tbsp fresh parsley or chives, finely chopped
Dressing:
3 tbsp extra-virgin olive oil
1 tbsp fresh lemon juice (or apple cider vinegar)
1 small garlic clove, finely minced (optional)
Salt, to taste
Freshly ground black pepper, to taste
🍳 Instructions
1️⃣ Hard-Boil the Eggs
Place eggs in a saucepan and cover with cold water
Bring to a boil, then cover and turn off heat
Let sit 10–12 minutes
Transfer to ice water, peel, and slice into halves or quarters
2️⃣ Prep the Vegetables
Wash and dry spinach thoroughly
Dice avocados into bite-size cubes
Thinly slice red onion
Chop herbs
💡 Tip: Toss avocado with a few drops of lemon to prevent browning
3️⃣ Make the Dressing
In a small bowl, whisk together:
Olive oil
Lemon juice
Garlic (if using)
Salt & pepper
Taste and adjust acidity or seasoning
4️⃣ Assemble the Salad
In a large bowl, add spinach, onion, and herbs
Gently fold in avocado
Add sliced eggs on top
5️⃣ Dress & Finish
Drizzle dressing over salad
Toss very gently to avoid breaking avocado
Finish with extra cracked black pepper
