Cheesy Garlic Foil-Baked Potatoes
Description
Tender baby potatoes baked in foil with butter, garlic, and herbs, then smothered in melted cheese until golden and bubbly. This is an easy, comforting side dish or snack—perfect for oven or air fryer.
Ingredients (Serves 3–4)

Baby potatoes – 600 g (halved or quartered)

Olive oil – 2 tbsp

Butter – 2 tbsp, melted

Garlic – 4 cloves, minced

Salt – 1 tsp (or to taste)

Black pepper – ½ tsp

Paprika – ½ tsp
-
Dried oregano or Italian seasoning – 1 tsp

Mozzarella cheese – 1½ cups, shredded

Parmesan cheese – ½ cup, grated

Fresh parsley or coriander – 2 tbsp, chopped
Instructions
1. Prepare the Potatoes

Preheat oven to 200°C (400°F).

Wash and cut potatoes into halves or quarters (similar size for even cooking).

In a bowl, mix olive oil, melted butter, garlic, salt, pepper, paprika, and oregano.

Toss potatoes well until fully coated.
2. Bake in Foil

Line a baking tray with aluminum foil and place potatoes in the center.

Wrap tightly to form a sealed packet.

Bake for 30–35 minutes, until potatoes are fork-tender.
3. Add Cheese

Carefully open the foil.

Sprinkle mozzarella and parmesan evenly over the potatoes.

Leave foil open and return to oven for 10–15 minutes, until cheese is melted and lightly golden.
4. Garnish & Serve

Sprinkle fresh parsley on top.

Serve hot as a side dish or appetizer.
Optional Variations

Spicy: Add chili flakes or cayenne.

Creamy: Drizzle 2–3 tbsp cream before adding cheese.

Air fryer: Cook wrapped potatoes at 180°C for 20 minutes, then unwrap, add cheese, and air fry 5–7 minutes.
