Apple-Oatmeal Muffins

⭐ Ingredients
Dry:
1 cup rolled oats
1 cup all-purpose flour (or whole-wheat flour)
1 tsp baking powder
½ tsp baking soda
1 tsp cinnamon
¼ tsp salt
Wet:
1 large egg
½ cup milk (any type)
⅓ cup honey or brown sugar
¼ cup melted butter or oil (can sub applesauce)
1 tsp vanilla extract
1 cup finely chopped apple (peeled or unpeeled)
🥣 Instructions
1. Mix dry ingredients
In a bowl, combine:
oats, flour, baking powder, baking soda, cinnamon, salt.
2. Mix wet ingredients
In another bowl, whisk together:
egg, milk, honey/brown sugar, melted butter/oil (or applesauce), vanilla.
3. Combine
Add the wet mixture to the dry ingredients.
Fold in the chopped apple.
Do not overmix — a slightly thick batter is perfect.
4. Fill muffin tray
Line a 12-cup muffin tin.
Fill each cup about ¾ full.
5. Bake
Bake at 350°F / 180°C for 20–22 minutes,
or until tops are golden and a toothpick comes out clean.
6. Cool & enjoy
Let cool 10 minutes.
Store airtight 3–4 days or freeze up to 3 months.

Use unsweetened applesauce instead of butter/oil
Use zero-cal sweetener instead of honey/sugar
Use skim milk
Use whole-wheat flour
