Hearty Vegetable Soup (Broccoli & Veggie Style)
Ingredients

2 tbsp olive oil

1 medium onion, chopped

2 cloves garlic, minced

2 carrots, diced

2 celery stalks, chopped

1 small potato, diced (optional but nice for body)

1½–2 cups broccoli florets, chopped

6 cups vegetable broth

1 cup green beans or zucchini, sliced

½ cup chopped fresh parsley or spinach

1 tsp dried thyme or Italian seasoning

½ tsp black pepper

Salt, to taste

Optional: squeeze of lemon or pinch of red pepper flakes
Instructions

Sauté the base
Heat olive oil in a large pot over medium heat. Add onion and cook 3–4 minutes until soft. Stir in garlic and cook 30 seconds. -
Add veggies
Add carrots, celery, and potato. Cook for about 5 minutes, stirring occasionally. -
Simmer
Pour in vegetable broth. Add thyme, pepper, and a little salt. Bring to a boil, then reduce heat and simmer for 10 minutes. -
Finish the soup
Add broccoli and green beans/zucchini. Simmer another 5–7 minutes until veggies are tender but still bright. -
Final touch
Stir in parsley or spinach. Taste and adjust salt. Add lemon juice or chili flakes if you like.
