Hearty Vegetable Soup (Broccoli & Veggie Style)
Ingredients
2 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, chopped
1 small potato, diced (optional but nice for body)
1½–2 cups broccoli florets, chopped
6 cups vegetable broth
1 cup green beans or zucchini, sliced
½ cup chopped fresh parsley or spinach
1 tsp dried thyme or Italian seasoning
½ tsp black pepper
Salt, to taste
Optional: squeeze of lemon or pinch of red pepper flakes
Instructions
Sauté the base
Heat olive oil in a large pot over medium heat. Add onion and cook 3–4 minutes until soft. Stir in garlic and cook 30 seconds.Add veggies
Add carrots, celery, and potato. Cook for about 5 minutes, stirring occasionally.Simmer
Pour in vegetable broth. Add thyme, pepper, and a little salt. Bring to a boil, then reduce heat and simmer for 10 minutes.Finish the soup
Add broccoli and green beans/zucchini. Simmer another 5–7 minutes until veggies are tender but still bright.Final touch
Stir in parsley or spinach. Taste and adjust salt. Add lemon juice or chili flakes if you like.
Serving Tips
Serve hot with crusty bread 🍞
Add cooked pasta or rice to make it heartier
Sprinkle with grated Parmesan if you’re not keeping it vegan
