Crispy Oven-Baked Chicken Wings
Ingredients
-
2–2½ lbs chicken wings (split, tips removed)
-
1 tbsp baking powder (key for crispiness – NOT baking soda)
-
1 tsp salt
-
1 tsp paprika (smoked if you have it)
-
1 tsp garlic powder
-
1 tsp onion powder
-
½ tsp black pepper
-
½ tsp cayenne or chili powder (optional)
-
1–2 tbsp olive oil or melted butter
Optional glaze (like in the photo):
-
¼ cup BBQ sauce or hot sauce
-
1 tbsp honey or brown sugar
-
1 tbsp melted butter
Instructions
-
Prep the wings
Pat wings very dry with paper towels (this matters a lot). -
Season
In a large bowl, toss wings with baking powder, salt, spices, and olive oil until evenly coated. -
Bake – first round
Preheat oven to 425°F (220°C).
Line a baking tray with parchment or foil and place a wire rack on top.
Arrange wings skin-side up.
Bake for 40–45 minutes, flipping halfway. -
Optional glaze
Mix BBQ/hot sauce, honey, and butter.
Brush wings generously. -
Final crisp
Return to oven for 10–15 minutes until deeply golden and sticky-crispy.
Pro Tips 🔥
-
Don’t overcrowd the pan—space = crisp
-
Baking powder dries the skin → ultra crunch
-
For extra crunch, broil 2–3 minutes at the end (watch closely)
