Ingredients

Chicken

  • 4 bone-in, skin-on chicken thighs

  • 1½ tbsp olive oil

Dry Rub (Flavor + Crisp)

  • 1 tsp salt

  • 1 tsp paprika (smoked preferred)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp black pepper

  • ½ tsp dried thyme or oregano

  • ½ tsp chili powder or cayenne (optional)

Optional Finish

  • Lemon wedges (like in the image 🍋)

  • Fresh parsley or cilantro


Step-by-Step Instructions

1. Prep the Chicken (VERY important)

  • Remove chicken from fridge 15 minutes before cooking.

  • Pat very dry with paper towels (this is key for crispy skin).


2. Season

  • In a bowl, mix olive oil and all dry spices.

  • Rub mixture all over the chicken, especially under the skin if possible.

  • Let rest 10 minutes for flavor absorption.


3. Preheat Air Fryer

  • Set air fryer to 380°F (193°C)

  • Preheat for 3–5 minutes


4. Air Fry – First Round

  • Place thighs skin-side down in the basket.

  • Cook for 12 minutes


5. Flip & Crisp

  • Flip chicken skin-side up.

  • Increase temperature to 400°F (205°C).

  • Cook for 10–12 minutes until:

    • Skin is deeply golden & crispy

    • Internal temp reaches 165°F (74°C)


6. Rest & Finish

  • Rest chicken 5 minutes (keeps it juicy).

  • Squeeze fresh lemon over top.

  • Garnish with herbs if desired.

  • Do not overcrowd the basket

  • Bone-in, skin-on thighs = best flavor & crisp

  • If skin isn’t crispy enough, air fry 2–3 extra minutes

  • No breading needed—the skin does all the work
