🍗 Sticky Sweet & Spicy Glazed Chicken
📝 Ingredients (Serves 3–4)
For the chicken

1 kg chicken pieces (drumsticks, thighs, or boneless chunks)

1 tsp salt

1 tsp black pepper

1 tsp garlic powder

1 tsp paprika

½ tsp chili powder (adjust to taste)

1 cup all-purpose flour

½ cup cornflour (cornstarch)

1 egg
-
½ cup cold water or milk

Oil for deep frying
For the sticky glaze (key flavor)

½ cup honey or brown sugar
-
¼ cup soy sauce
-
¼ cup chili garlic sauce or hot sauce

2 tbsp ketchup
-
2 tbsp vinegar or lemon juice
-
1 tbsp oyster sauce (optional, but adds depth)

1 tbsp butter
-
1 tbsp oil
-
4–5 garlic cloves, very finely chopped

1 tsp crushed chili flakes (optional)
👩🍳 Instructions
1. Season the chicken
Wash and pat dry the chicken.
Season with salt, black pepper, garlic powder, paprika, and chili powder.
Let it rest for 15–20 minutes for better flavor.
2. Prepare the coating
In a bowl, mix:

Cornflour
In another bowl:

Whisk egg with cold water or milk.
Dip each chicken piece first into flour mix → then egg mixture → again into flour mix.
This double coating gives extra crispiness.
3. Fry the chicken
Heat oil on medium-high heat.
Fry chicken in batches for 8–10 minutes, turning occasionally, until golden brown and fully cooked.
Remove and place on a wire rack or paper towel.
4. Make the sticky glaze
In a pan over medium heat:

Add chopped garlic and sauté until fragrant (do not burn)
Add:

Honey/brown sugar

Soy sauce

Chili garlic sauce

Ketchup

Vinegar

Oyster sauce
Stir well and simmer for 3–5 minutes until thick, glossy, and sticky.
5. Coat the chicken
Add fried chicken directly into the sauce.
Toss gently until every piece is fully coated and shiny.
Cook for 1–2 minutes only—do not overcook or sauce will burn.
6. Rest & serve
Let chicken rest for 2 minutes so the glaze sets beautifully.
