Golden Cauliflower Steaks with Garlic Lemon Butter Sauce

Ingredients

For the Cauliflower

  • 1 large head cauliflower

  • 3 tbsp olive oil

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika (or smoked paprika)

  • ¼ tsp garlic powder

  • ¼ tsp dried thyme or oregano

For the Garlic Lemon Butter Sauce

  • 3 tbsp butter

  • 3 cloves garlic, minced

  • ½ cup vegetable broth (or chicken broth)

  • 1 tbsp lemon juice (fresh)

  • 1 tsp Dijon mustard (optional but great)

  • Salt & pepper, to taste

  • Fresh parsley, chopped (for garnish)

Optional Creamy Finish (like the dip shown)

  • ¼ cup heavy cream OR Greek yogurt

  • OR serve with garlic aioli / tahini sauce on the side


Step-by-Step Instructions

1. Prepare the Cauliflower Steaks

  1. Remove outer leaves from the cauliflower.

  2. Trim the stem just enough so it sits flat.

  3. Slice ¾–1 inch thick steaks from the center (you’ll get 2–4 good steaks).

  4. Save loose florets for another recipe.


2. Season

  1. Place steaks on a tray.

  2. Brush both sides generously with olive oil.

  3. Sprinkle evenly with salt, pepper, paprika, garlic powder, and herbs.


Cooking Options

🔥 Option 1: Oven Roasted

  1. Preheat oven to 425°F (220°C).

  2. Roast cauliflower on a lined tray for 20–25 minutes, flipping halfway.

  3. Roast until golden brown and tender.

🔥 Option 2: Air Fryer (Extra Crispy)

  1. Preheat air fryer to 375°F (190°C).

  2. Air fry steaks for 12–15 minutes, flipping once.

  3. Cook until edges are crisp and deeply golden.


3. Make the Garlic Lemon Butter Sauce

  1. Melt butter in a pan over medium heat.

  2. Add garlic and sauté 30 seconds (don’t brown).

  3. Stir in broth, lemon juice, and Dijon.

  4. Simmer 4–5 minutes until slightly reduced.

  5. Add cream (if using) and simmer 2 more minutes.

  6. Season with salt and pepper to taste.


4. Assemble & Serve

  1. Place cauliflower steaks in a serving dish.

  2. Spoon the warm sauce generously over them.

  3. Garnish with fresh parsley and cracked pepper.

  4. Serve with extra sauce or dip on the side.
