Blueberry Breakfast Quesadilla — Full Recipe
Ingredients
- 1 large flour tortilla
- 1/3 cup cream cheese or Greek yogurt
- 1–2 tbsp honey or maple syrup
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
- 1/2 cup fresh or frozen blueberries
- Butter or cooking spray for the pan
- Optional: powdered sugar, extra honey, or granola for topping
Instructions
- In a bowl, mix cream cheese (or yogurt) with honey, cinnamon, and vanilla.
- Spread the mixture over half of the tortilla.
- Add the blueberries on top and fold the tortilla in half.
- Heat a pan over medium heat with a little butter or spray.
- Cook the quesadilla 2–3 minutes per side until golden and lightly crisp.
- Slice into wedges.
- Optional: drizzle with honey, dust with powdered sugar, or top with granola for crunch.
