Skillet-Baked Chicken with Mushrooms (Garlic Butter Style)

Chicken & Veg
2 lbs (900 g) chicken thighs or breast cutlets (boneless or bone-in both work)
8 oz (225 g) mushrooms, sliced (button or cremini)
4 cloves garlic, minced
1 small onion, finely chopped (optional but recommended)
Sauce
3 tbsp butter
2 tbsp olive oil
¼ cup chicken broth
2 tbsp soy sauce (or Worcestershire sauce)
1 tbsp honey or brown sugar
1 tsp Dijon mustard (optional, adds depth)
1 tsp paprika (smoked if possible)
½ tsp dried thyme or Italian seasoning
Salt & black pepper, to taste
Red pepper flakes (optional, for heat)
Garnish (optional)
Fresh parsley or thyme
Extra cracked black pepper
🔥 Instructions
1. Preheat & Prep
Preheat oven to 375°F (190°C).
Pat chicken dry and season generously with:
Salt
Black pepper
Paprika
2. Sear the Chicken
Heat olive oil + 1 tbsp butter in a large oven-safe skillet over medium-high heat.
Sear chicken 3–4 minutes per side, until golden brown.
Remove chicken and set aside (it will finish cooking in the oven).
👉 Don’t overcrowd—sear in batches if needed.
3. Cook the Mushrooms
In the same skillet, add mushrooms.
Cook 5–7 minutes, stirring occasionally, until browned and slightly caramelized.
Add onion (if using) and cook 2 more minutes.
Stir in garlic and cook 30 seconds until fragrant.
4. Build the Sauce
Lower heat to medium.
Add:
Chicken broth
Soy sauce
Honey
Dijon mustard
Thyme
Stir and simmer 2–3 minutes, scraping up all the flavorful bits.
5. Combine & Bake
Return chicken to the skillet, nestling it into the sauce.
Spoon sauce and mushrooms over the top.
Add remaining butter in small pieces around the pan.
Transfer skillet to oven and bake 20–25 minutes, until:
Chicken reaches 165°F / 74°C
Sauce is glossy and slightly thickened
6. Finish & Serve
Spoon pan sauce over chicken.
Garnish with herbs and cracked black pepper.
