8 slices white or sandwich bread (edges on or off—your call)
2 tbsp butter, softened (for greasing)
Topping Mixture
1½ cups mozzarella cheese, grated
½ cup cheddar cheese, grated
½ cup cooked bacon bits or minced cooked chicken
¼ cup green bell pepper, finely chopped
¼ cup onion, finely chopped
2 tbsp spring onions (green onions), chopped
½ cup mayonnaise
2 tbsp sour cream or fresh cream (optional but recommended)
Seasoning
½ tsp black pepper
½ tsp red chili flakes (adjust to taste)
½ tsp garlic powder (or 1 tsp fresh minced garlic)
Salt to taste
½ tsp Italian seasoning or oregano
🔥 Instructions
1️⃣ Prep the Oven & Dish
Preheat oven to 180°C / 350°F
Grease a baking dish lightly with butter
Arrange bread slices tightly in a single layer
2️⃣ Make the Cheesy Topping
In a bowl, mix:
Mozzarella + cheddar
Bacon/chicken
Bell pepper, onion, spring onions
Mayonnaise + cream
All seasonings
Mix until creamy and well combined.
3️⃣ Assemble
Spread the mixture evenly over each bread slice

4️⃣ Bake
Place dish in the oven
Bake uncovered for 20–25 minutes
Cheese should be fully melted, bubbly, and lightly golden on top
👉 For extra browning, broil/grill for 2–3 minutes at the end (watch closely!).
