This creamy avocado cucumber olive salad is fresh, vibrant, and full of Mediterranean flavors. Creamy avocado, crisp cucumber, and briny olives are tossed in a light herby dressing that’s refreshing, healthy, and perfect as a side dish or light meal.


🛒 Ingredients (Serves 2–3)

  • 2 ripe avocados, peeled and cubed

  • 2 medium cucumbers, sliced or chopped

  • ½ cup black or Kalamata olives, pitted

  • ¼ small red onion, thinly sliced

  • 2 tbsp fresh dill, finely chopped

  • 2 tbsp fresh parsley or cilantro, chopped

For the Dressing

  • 3 tbsp olive oil

  • 1 tbsp lemon juice (freshly squeezed)

  • 1 small garlic clove, minced

  • ½ tsp salt (adjust to taste)

  • ½ tsp black pepper

  • ¼ tsp red chili flakes (optional)


👩‍🍳 Instructions

  1. Prepare the vegetables

    • Cut the avocados into bite-sized cubes.

    • Slice the cucumbers and red onion thinly.

    • Pit the olives if needed.

  2. Make the dressing

    • In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, black pepper, and chili flakes until well combined.

  3. Assemble the salad

    • In a large bowl, add avocado, cucumber, olives, and red onion.

    • Pour the dressing over the salad.

  4. Add herbs & toss

    • Sprinkle chopped dill and parsley on top.

    • Gently toss until everything is evenly coated, being careful not to mash the avocado.
