🌮🥣 Creamy Taco Soup

🛒 Ingredients
1 lb ground beef (or ground turkey)
1 small onion, diced
2 cloves garlic, minced
1 packet taco seasoning (or 2 tbsp homemade)
1 packet ranch seasoning
1 can (15 oz) corn, drained
1 can (15 oz) black beans, drained & rinsed
1 can (10 oz) Rotel (diced tomatoes w/ green chilies)
4 cups chicken broth
1 cup heavy cream
8 oz cream cheese, cubed
Salt & pepper to taste
🔥 Instructions
In a large pot over medium heat, brown the ground beef with onion.
Drain excess grease if needed.Add garlic, taco seasoning, and ranch seasoning. Stir 30 seconds until fragrant.
Add corn, black beans, Rotel, and chicken broth. Stir well.
Bring to a gentle boil, then reduce to a simmer (10 minutes).
Stir in cream cheese until fully melted.
Add heavy cream, stir, and simmer another 5–10 minutes until thick and creamy.
Taste and adjust seasoning.
