Ingredients (Serves 3–4)
For the Potatoes
1 kg potatoes (Yukon Gold or russet work best)
3 tbsp olive oil
1 tsp salt (or to taste)
½ tsp black pepper
1 tsp paprika
½ tsp garlic powder
½ tsp dried oregano or Italian seasoning
For Garlic Butter & Topping
3 tbsp butter (melted)
3–4 cloves garlic (finely minced)
½ cup freshly grated Parmesan cheese
2 tbsp fresh parsley (finely chopped)
Extra sea salt or chili flakes (optional)
Instructions
1. Prepare the Potatoes
Wash and scrub the potatoes well (no need to peel).
Cut each potato into thick wedges.
Soak wedges in cold water for 20–30 minutes (this removes excess starch and helps crispiness).
Drain and pat completely dry with a kitchen towel.
2. Season
In a large bowl, add potato wedges.
Drizzle with olive oil.
Sprinkle salt, black pepper, paprika, garlic powder, and oregano.
Toss well until all wedges are evenly coated.
3. Bake or Air Fry
Oven Method
Preheat oven to 200°C (400°F).
Line a baking tray with parchment paper.
Arrange wedges skin-side down in a single layer.
Bake for 35–40 minutes, flipping halfway, until golden and crispy.
Air Fryer Method
Preheat air fryer to 190°C (375°F).
Place wedges in basket (do not overcrowd).
Cook for 18–22 minutes, shaking halfway.

Mix melted butter and minced garlic in a small bowl.
