Crispy Oven-Baked Chicken Wings

Ingredients

  • 2–2½ lbs chicken wings (split, tips removed)

  • 1 tbsp baking powder (key for crispiness – NOT baking soda)

  • 1 tsp salt

  • 1 tsp paprika (smoked if you have it)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp black pepper

  • ½ tsp cayenne or chili powder (optional)

  • 1–2 tbsp olive oil or melted butter

Optional glaze (like in the photo):

  • ¼ cup BBQ sauce or hot sauce

  • 1 tbsp honey or brown sugar

  • 1 tbsp melted butter


Instructions

  1. Prep the wings
    Pat wings very dry with paper towels (this matters a lot).

  2. Season
    In a large bowl, toss wings with baking powder, salt, spices, and olive oil until evenly coated.

  3. Bake – first round
    Preheat oven to 425°F (220°C).
    Line a baking tray with parchment or foil and place a wire rack on top.
    Arrange wings skin-side up.
    Bake for 40–45 minutes, flipping halfway.

  4. Optional glaze
    Mix BBQ/hot sauce, honey, and butter.
    Brush wings generously.

  5. Final crisp
    Return to oven for 10–15 minutes until deeply golden and sticky-crispy.

  • Don’t overcrowd the pan—space = crisp

  • Baking powder dries the skin → ultra crunch

  • For extra crunch, broil 2–3 minutes at the end (watch closely)
