🍗 Ingredients (serves 4)
8–10 chicken drumsticks
1½ cups buttermilk (or plain yogurt thinned with water)
1 tbsp lemon juice or vinegar
1½ tsp salt (adjust to taste)
1 tsp black pepper
1½ tsp paprika (smoked if possible)
1 tsp garlic powder
1 tsp onion powder
½ tsp ground ginger
½ tsp cayenne or chili powder (optional)
½ tsp dried thyme or oregano
For Coating
1 cup all-purpose flour
2 tbsp cornstarch (secret for crispiness)
½ tsp salt
½ tsp paprika
½ tsp black pepper
For Cooking
Oil (vegetable, canola, or sunflower)
Frying: enough for shallow frying
Baking: 2–3 tbsp
🧂 Step 1: Marinate the Chicken (Very Important)
Wash chicken and pat dry.
In a large bowl, mix:
Buttermilk
Lemon juice
Salt, pepper, paprika
Garlic powder, onion powder
Ginger, cayenne, herbs
Add chicken and coat well.
Cover and marinate:
Minimum: 1 hour
Best: Overnight in the fridge

Mix flour, cornstarch, salt, paprika, and pepper in a bowl.
Remove chicken from marinade (don’t wipe it off).

Heat oil in a deep pan over medium heat.
Oil should be hot but not smoking.
Fry drumsticks in batches:
Turn every 3–4 minutes
Fry 15–18 minutes total
Chicken is done when:
Deep golden brown
Internal temp reaches 165°F / 75°C
Drain on paper towels.
