Garlic Butter Shrimp with Mushrooms & Asparagus

Ingredients

Main

  • 1½ lb large shrimp (peeled & deveined, tails on or off)

  • 1 bunch asparagus, trimmed

  • 8 oz cremini or button mushrooms, sliced

  • 2 tbsp olive oil

  • 2 tbsp butter


Garlic Soy Butter Sauce

  • 4 cloves garlic, minced

  • 3 tbsp soy sauce (or tamari)

  • 1 tbsp oyster sauce (optional but adds depth)

  • 1 tbsp honey or brown sugar

  • 1 tsp sesame oil

  • ½ tsp black pepper

  • ¼ tsp red pepper flakes (optional)


Garnish

  • Green onions, finely chopped

  • Optional: sesame seeds or fresh parsley


Instructions

1. Prep Everything First

This cooks fast, so have everything ready:

  • Pat shrimp completely dry

  • Slice mushrooms

  • Trim asparagus into 2–3 inch pieces

  • Mix sauce ingredients in a small bowl


2. Sauté the Asparagus

  1. Heat 1 tbsp olive oil in a large skillet over medium-high heat.

  2. Add asparagus with a pinch of salt.

  3. Cook 3–4 minutes, until bright green and just tender.

  4. Remove from pan and set aside.


3. Cook the Mushrooms

  1. Add remaining olive oil to the same pan.

  2. Add mushrooms in a single layer.

  3. Cook 4–5 minutes, undisturbed at first, until golden and caramelized.

  4. Stir and cook 1 more minute.

👉 Don’t overcrowd — this is how you get that deep brown color.


4. Sear the Shrimp

  1. Push mushrooms to the side.

  2. Add butter to the pan.

  3. Add shrimp in a single layer.

  4. Cook 1½–2 minutes per side, until pink and slightly curled.


5. Sauce It Up

  1. Add garlic and stir for 20–30 seconds (don’t burn).

  2. Pour in the sauce mixture.

  3. Toss everything together and let simmer 1–2 minutes until glossy and slightly thick.


6. Combine & Finish

  1. Add asparagus back into the pan.

  2. Toss gently to coat everything in sauce.

  3. Taste and adjust (more pepper, splash of soy, or tiny bit of butter).


How to Serve

  • Over steamed rice or jasmine rice

  • With cauliflower rice (low-carb)

  • Tossed with noodles

  • Or just straight from the pan 😌


Pro Tips

  • Juiciest shrimp: Remove as soon as they curl into a “C” shape.

  • Extra glossy sauce: Add 1–2 tbsp chicken broth or water at the end.

  • More richness: Finish with a small knob of cold butter.

  • Spicy: Add chili oil or sriracha

  • Lemon garlic: Add lemon zest + juice

  • Keto: Skip honey, use monk fruit or erythritol

  • Asian-style: Add ginger and a splash of rice vinegar
