Garlic-Sautéed Broccoli Stems (Fast & Delicious)
Ingredients
Broccoli stems, peeled and sliced
1–2 tbsp olive oil
2 cloves garlic, minced
Salt & black pepper
Optional: chili flakes, soy sauce, lemon
Instructions
Peel the tough outer layer (important!)
Slice stems into coins or matchsticks
Heat oil in a pan over medium heat
Add garlic → sauté 30 seconds
Add stems, salt & pepper
Cook 5–7 minutes until tender-crisp
Finish with lemon juice or a splash of soy sauce
👉 Great as a side dish or tossed into rice/noodles.
Creamy Broccoli Stem Soup (Zero-Waste)
Ingredients
Broccoli stems, chopped
1 small onion
1 potato (for creaminess)
2 cups vegetable or chicken stock
Salt & pepper
Cream or milk (optional)
Instructions
Sauté onion in oil until soft
Add stems + potato, cook 3 minutes
Add stock, simmer 15–20 minutes
Blend until smooth
Finish with cream, salt & pepper
Crunchy Broccoli Stem Slaw (Fresh!)
Julienne peeled stems
Add carrots, apple, or cabbage
Toss with lemon juice, olive oil, salt
Optional yogurt or mayo dressing
