Hearty Veggie Casserole
Ingredients
Vegetables
- 1 head broccoli, cut into florets
- 1 head cauliflower, cut into florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup olive oil
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 green Spanish onion, chopped
- 1 cup chopped Spanish leaves (optional)
Egg Mixture
- 4 large eggs
- 1/2 cup milk
- 1/4 cup all-purpose flour
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat Oven:
Set oven to 400°F (200°C). - Prepare Vegetables:
In a large bowl, toss broccoli, cauliflower, bell peppers, cherry tomatoes, Spanish onion, and Spanish leaves with olive oil, Italian seasoning, salt, and pepper.
Spread vegetables evenly in a large baking dish. - Roast Vegetables:
Bake for 20 minutes until veggies begin to soften. - Mix Egg Batter:
In another bowl, whisk eggs, milk, flour, salt, and pepper until smooth. - Combine:
Remove vegetables from oven and pour the egg mixture evenly over them. - Bake Again:
Return to oven and bake for 20–25 minutes until the casserole is set and lightly golden. - Serve:
Let cool slightly, slice, and enjoy warm.
Tips
- Add cheese on top (mozzarella, cheddar, or feta) for a richer casserole.
- Add cooked chicken or beans for extra protein.
