🥒 Homemade Cucumber Sandwiches


Ingredients (Makes 8 small sandwiches)

  • 1 medium cucumber (thinly sliced)

  • 8 slices soft white or whole wheat sandwich bread (crusts removed, optional)

  • 3 tbsp cream cheese (softened) OR butter

  • 1 tbsp mayonnaise (optional, for extra creaminess)

  • 1 tsp fresh dill (finely chopped) OR ½ tsp dried dill

  • ½ tsp lemon juice

  • Salt & black pepper, to taste


Instructions

Step 1 – Prepare the Cucumber

  1. Wash and thinly slice the cucumber (use a mandoline for even slices).

  2. Lightly sprinkle slices with salt, place on paper towels for 10 minutes to remove excess moisture. Pat dry.

Step 2 – Make the Spread

  1. In a small bowl, mix cream cheese (or butter), mayo (if using), dill, lemon juice, salt, and pepper.

  2. Spread this mixture evenly on one side of each bread slice.

Step 3 – Assemble the Sandwiches

  1. Arrange cucumber slices in a single layer on 4 slices of bread.

  2. Top with the remaining slices, cream cheese side down.

  3. Gently press, then cut into triangles or finger-sized rectangles for serving.


Variations

Serving

  • Best served immediately or within 2–3 hours (keep covered with a damp cloth or plastic wrap to prevent drying).

  • Serve chilled with tea, coffee, or as a picnic snack.
