Ingredients
For the seasoned beef:

1 tbsp taco seasoning (low-carb)

Salad layers:

2 cups chopped romaine lettuce

1 cup cherry tomatoes, halved

1 cup cucumbers, diced

1 cup bell peppers, diced

½ cup red onion, thinly sliced

1 cup shredded cheddar or Mexican cheese

½ cup black olives, sliced (optional)

1 avocado, diced

Fresh cilantro for garnish
Low-carb dressing:

½ cup sour cream or Greek yogurt

2 tbsp mayo
-
1 tbsp lime juice
-
1 tsp taco seasoning
-
1 tsp hot sauce (optional)
⭐ Instructions
1. Cook the Beef
Heat olive oil in a skillet, add ground beef, cook until browned.
Add taco seasoning, garlic powder, salt, pepper.
Cook 2–3 more minutes. Set aside to cool slightly.
2. Prep the Dressing
Whisk sour cream (or yogurt), mayo, lime juice, taco seasoning, and hot sauce until creamy.
3. Layer the Salad (the fun part!)
In a large bowl or glass dish, layer in this order for best look + crunch:
1️⃣ Romaine lettuce
2️⃣ Tomatoes
3️⃣ Cucumbers
4️⃣ Bell peppers
5️⃣ Red onion
6️⃣ Seasoned beef
7️⃣ Cheese
8️⃣ Olives
9️⃣ Avocado
Drizzle with dressing or serve on the side.
