Oatmeal, apple and carrots! I don’t eat any sugar at all! No flour

Ingredients:**
– 2 cups (200 g) rolled oats, blended into a coarse flour
– 1 teaspoon baking powder
– 1 cup (240 ml) milk of your choice (almond, oat, dairy, etc.)
– 1 medium carrot, peeled and grated
– 1 apple, grated (with peel for extra fiber)
– 9 dried apricots, chopped (rinse in hot water to soften)
– 4 tablespoons raisins (also rinsed)
– 1 teaspoon cinnamon
– 3 eggs, lightly beaten
### **Instructions:**
1. **Preheat oven** to 350°F (175°C). Line a loaf pan or small baking dish with parchment paper or lightly grease it with oil.
2. In a large mixing bowl, combine the blended oats, baking powder, and cinnamon.
3. In another bowl, mix together the milk and eggs. Stir in grated carrot, grated apple, apricots, and raisins.
4. Add the wet ingredients to the dry ingredients and stir until fully combined.
5. Pour the mixture into your prepared baking dish and spread evenly.
6. **Bake** for 35–40 minutes, or until golden brown on top and a toothpick inserted in the center comes out clean.
7. Let it cool slightly before slicing.
