Slow Cooker Shredded Beef in Onion Gravy

What you’re making

  • Fall-apart beef (pot-roast tender)

Ingredients (4–6 servings)

Beef

  • 3–4 lb chuck roast (best choice)
    Sub: brisket or bottom round

  • 2 tbsp olive oil

  • 1½ tsp kosher salt

  • 1 tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp smoked paprika (optional but great)

  • ½ tsp dried thyme or rosemary


Onion Gravy Base

  • 2 large yellow onions, thinly sliced

  • 3 cloves garlic, minced

  • 2 cups beef broth (low sodium)

  • 1 cup beef gravy or

    • 2 packets onion soup mix or

    • 1 packet onion soup mix + 1 packet brown gravy mix

  • 2 tbsp Worcestershire sauce

  • 1 tbsp soy sauce (adds umami, not “soy” flavor)

  • 1 tbsp tomato paste (optional, deepens color)

  • 1 tsp sugar or brown sugar (balances onions)


Optional Thickener (if needed)

  • 2 tbsp cornstarch

  • 2 tbsp cold water


Step-by-Step Instructions

1. Sear the Beef (Don’t Skip This)

  1. Pat beef dry.

  2. Season all sides with salt, pepper, garlic powder, onion powder, paprika, and herbs.

  3. Heat olive oil in a skillet over medium-high.

  4. Sear beef 3–4 minutes per side until deeply browned.

👉 This creates the flavor foundation for that dark, glossy gravy.


2. Build the Slow Cooker

  1. Add sliced onions to the bottom of the slow cooker.

  2. Sprinkle minced garlic over the onions.

  3. Place seared beef on top.


3. Mix the Gravy

In a bowl, whisk together:

  • Beef broth

  • Gravy or soup mix

  • Worcestershire

  • Soy sauce

  • Tomato paste

  • Sugar

Pour evenly over the beef.


4. Slow Cook to Perfection

  • LOW: 8–9 hours (best texture)

  • HIGH: 4–5 hours

The beef should shred effortlessly with a fork.


5. Shred & Soak

  1. Remove beef and shred using two forks.

  2. Return shredded beef to the slow cooker.

  3. Stir well so every strand is coated in gravy.

  4. Cook an additional 20–30 minutes on LOW to soak up flavor.


6. Thicken the Gravy (If Needed)

If you want it extra luscious like the photo:

  1. Mix cornstarch + cold water.

  2. Stir into the slow cooker.

  3. Cover and cook on HIGH for 10–15 minutes until glossy and thick.
