Steakhouse Ribeye with Garlic Butter Shrimp & Loaded Baked Potato

INGREDIENTS

Ribeye Steak

  • 1 large ribeye steak (16–20 oz, 1½–2 inches thick)

  • 1 tbsp olive oil

  • Kosher salt (generous)

  • Fresh cracked black pepper

  • 2 tbsp butter

  • 2 cloves garlic, smashed

  • 1 sprig fresh rosemary or thyme (optional but 🔥)


Garlic Butter Shrimp

  • 8–12 large shrimp, shell-on or peeled (tails on preferred)

  • 2 tbsp butter

  • 1 tbsp olive oil

  • 2 cloves garlic, minced

  • Salt & pepper to taste

  • Pinch paprika or cayenne (optional)

  • Splash of lemon juice


Loaded Baked Potatoes

  • 2 large russet potatoes

  • Olive oil

  • Kosher salt

Toppings

  • Butter

  • Sour cream

  • Shredded cheddar cheese

  • Crispy bacon bits

  • Sliced green onions or chives

  • Salt & pepper


INSTRUCTIONS


1. Bake the Potatoes (Start First)

  1. Preheat oven to 425°F / 220°C.

  2. Scrub potatoes clean and dry thoroughly.

  3. Pierce each potato 5–6 times with a fork.

  4. Rub lightly with olive oil and sprinkle generously with salt.

  5. Place directly on oven rack or on a tray.

  6. Bake 50–60 minutes, until skin is crispy and inside is fluffy.

🔥 Pro tip: Squeeze the potato — it should give easily.


2. Prep the Steak

  1. Remove steak from fridge 30–45 minutes before cooking.

  2. Pat completely dry (this is key for a great crust).

  3. Rub lightly with olive oil.

  4. Season heavily with salt and black pepper on both sides.


3. Cook the Ribeye (Pan or Grill)

Cast-Iron / Skillet Method (Best Indoors)

  1. Heat cast-iron pan over high heat until smoking hot.

  2. Add steak — do NOT move it.

  3. Sear 2½–3 minutes per side.

  4. Reduce heat to medium.

  5. Add butter, garlic, and herbs.

  6. Tilt pan and baste steak continuously for 1–2 minutes.

Doneness Guide

  • Rare: 120–125°F (49–52°C)

  • Medium-Rare: 130–135°F (54–57°C) ✅ steakhouse sweet spot

  • Medium: 140–145°F (60–63°C)

  1. Remove steak and rest 10 minutes (don’t skip this).


4. Garlic Butter Shrimp

  1. In the same pan (or a clean skillet), melt butter with olive oil over medium heat.

  2. Add garlic, cook 15 seconds (don’t brown).

  3. Add shrimp in a single layer.

  4. Cook 1½–2 minutes per side until pink and curled.

  5. Season with salt, pepper, paprika, and a squeeze of lemon.

  6. Spoon garlic butter over shrimp.


5. Load the Potatoes

  1. Slice potatoes open lengthwise.

  2. Fluff insides with a fork.

  3. Add butter → sour cream → cheese.

  4. Top with bacon and green onions.

  5. Season lightly with salt & pepper.


6. Plate Like a Steakhouse

  • Steak front and center (slice if you want drama)

  • Shrimp nestled beside with garlic butter drizzled over

  • Potato standing tall, fully loaded

  • Spoon extra butter sauce over steak and shrimp


OPTIONAL UPGRADES 🔥

  • Add blue cheese crumbles to the steak

  • Finish steak with flaky sea salt

  • Splash white wine into shrimp butter for sauce

  • Add grilled asparagus or sautéed mushrooms
