Steakhouse Ribeye with Garlic Butter Shrimp & Loaded Baked Potato

INGREDIENTS
Ribeye Steak
1 large ribeye steak (16–20 oz, 1½–2 inches thick)
1 tbsp olive oil
Kosher salt (generous)
Fresh cracked black pepper
2 tbsp butter
2 cloves garlic, smashed
1 sprig fresh rosemary or thyme (optional but 🔥)
Garlic Butter Shrimp
8–12 large shrimp, shell-on or peeled (tails on preferred)
2 tbsp butter
1 tbsp olive oil
2 cloves garlic, minced
Salt & pepper to taste
Pinch paprika or cayenne (optional)
Splash of lemon juice
Loaded Baked Potatoes
2 large russet potatoes
Olive oil
Kosher salt
Toppings
Butter
Sour cream
Shredded cheddar cheese
Crispy bacon bits
Sliced green onions or chives
Salt & pepper
INSTRUCTIONS
1. Bake the Potatoes (Start First)
Preheat oven to 425°F / 220°C.
Scrub potatoes clean and dry thoroughly.
Pierce each potato 5–6 times with a fork.
Rub lightly with olive oil and sprinkle generously with salt.
Place directly on oven rack or on a tray.
Bake 50–60 minutes, until skin is crispy and inside is fluffy.
🔥 Pro tip: Squeeze the potato — it should give easily.
2. Prep the Steak
Remove steak from fridge 30–45 minutes before cooking.
Pat completely dry (this is key for a great crust).
Rub lightly with olive oil.
Season heavily with salt and black pepper on both sides.
3. Cook the Ribeye (Pan or Grill)
Cast-Iron / Skillet Method (Best Indoors)
Heat cast-iron pan over high heat until smoking hot.
Add steak — do NOT move it.
Sear 2½–3 minutes per side.
Reduce heat to medium.
Add butter, garlic, and herbs.
Tilt pan and baste steak continuously for 1–2 minutes.
Doneness Guide
Rare: 120–125°F (49–52°C)
Medium-Rare: 130–135°F (54–57°C) ✅ steakhouse sweet spot
Medium: 140–145°F (60–63°C)
Remove steak and rest 10 minutes (don’t skip this).
4. Garlic Butter Shrimp
In the same pan (or a clean skillet), melt butter with olive oil over medium heat.
Add garlic, cook 15 seconds (don’t brown).
Add shrimp in a single layer.
Cook 1½–2 minutes per side until pink and curled.
Season with salt, pepper, paprika, and a squeeze of lemon.
Spoon garlic butter over shrimp.
5. Load the Potatoes
Slice potatoes open lengthwise.
Fluff insides with a fork.
Add butter → sour cream → cheese.
Top with bacon and green onions.
Season lightly with salt & pepper.
6. Plate Like a Steakhouse
Steak front and center (slice if you want drama)
Shrimp nestled beside with garlic butter drizzled over
Potato standing tall, fully loaded
Spoon extra butter sauce over steak and shrimp
