Street Corn Chicken Rice Bowl

Ingredients

For the Chicken

  • 2 chicken breasts (or thighs), sliced

  • Salt to taste

Base

  • 2 cups cooked white, brown, or Mexican rice

  • 1 cup shredded lettuce or chopped spinach (optional)

Toppings

  • Extra cilantro

  • Lime wedges

  • Avocado slices

  • Jalapeños

  • Extra cotija/feta

Step 1 — Cook the Chicken

  1. In a bowl, mix chicken with olive oil and all spices.

  2. Heat a skillet over medium-high heat.

  3. Cook chicken 5–7 minutes until browned and cooked through.

  4. Squeeze lime juice over it and set aside.

Step 2 — Make the Street Corn Mix

  1. In a pan, melt butter and add corn.
