Summer Peach & Berry Salad with Herbs
Ingredients (serves 4)

3 ripe peaches or nectarines, sliced

1 cup blueberries

1 cup cherries, pitted (or cranberries if you want more tart)

2–3 tbsp fresh mint, torn

2 tbsp fresh parsley, finely chopped

2 tbsp crumbled feta or fresh goat cheese (optional but 🔥)

1–2 tbsp finely diced red onion or shallot (optional, for bite)
Dressing

2 tbsp extra-virgin olive oil
-
1 tbsp honey or maple syrup
-
1 tbsp fresh lemon juice (or lime)

Pinch of salt

Freshly cracked black pepper
Instructions

Prep the fruit
Add peaches, blueberries, and cherries to a large bowl. -
Add fresh elements
Sprinkle in mint, parsley, onion/shallot (if using), and cheese. -
Make the dressing
Whisk olive oil, honey, lemon juice, salt, and pepper until smooth. -
Toss gently
Pour dressing over the salad and toss carefully so the fruit stays intact. -
Finish & serve
Taste and adjust sweetness or acidity. Serve immediately or chill 10–15 minutes.
