Summer Peach & Berry Salad with Herbs

Ingredients (serves 4)

  • 3 ripe peaches or nectarines, sliced

  • 1 cup blueberries

  • 1 cup cherries, pitted (or cranberries if you want more tart)

  • 2–3 tbsp fresh mint, torn

  • 2 tbsp fresh parsley, finely chopped

  • 2 tbsp crumbled feta or fresh goat cheese (optional but 🔥)

  • 1–2 tbsp finely diced red onion or shallot (optional, for bite)

Dressing

  • 2 tbsp extra-virgin olive oil

  • 1 tbsp honey or maple syrup

  • 1 tbsp fresh lemon juice (or lime)

  • Pinch of salt

  • Freshly cracked black pepper


Instructions

  1. Prep the fruit
    Add peaches, blueberries, and cherries to a large bowl.

  2. Add fresh elements
    Sprinkle in mint, parsley, onion/shallot (if using), and cheese.

  3. Make the dressing
    Whisk olive oil, honey, lemon juice, salt, and pepper until smooth.

  4. Toss gently
    Pour dressing over the salad and toss carefully so the fruit stays intact.

  5. Finish & serve
    Taste and adjust sweetness or acidity. Serve immediately or chill 10–15 minutes.


Optional Upgrades

  • Add toasted almonds or pistachios for crunch

  • Swap cheese for burrata if you want it extra luxe

  • Drizzle with balsamic glaze for a deeper flavor

  • Add grilled peaches for a smoky note
