🌶️🧀 Fajita Chicken Casserole Recipe

✅ Ingredients:
For the Chicken & Veggies:
2 large chicken breasts (or thighs), cooked and shredded or cubed
1 tablespoon olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 small red onion, sliced
1 teaspoon chili powder
1 teaspoon paprika
1 teaspoon cumin
½ teaspoon garlic powder
½ teaspoon onion powder
Salt and pepper to taste
For the Creamy Mixture:
4 oz (½ block) cream cheese, softened
½ cup sour cream
½ cup salsa (or canned diced tomatoes with green chilies)
1½ cups shredded Mexican blend or cheddar cheese (divided)
Juice of ½ lime (optional for brightness)
Optional Toppings:
Fresh cilantro
Sliced jalapeños
Avocado slices or guacamole
Green onions
🔥 Instructions:
1. Preheat Oven
Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
2. Sauté the Veggies
In a skillet over medium heat, add olive oil. Sauté bell peppers and onions for 5–6 minutes until slightly softened.
Add chili powder, paprika, cumin, garlic powder, onion powder, salt, and pepper. Stir well and cook for another 1–2 minutes. Remove from heat.
3. Make the Creamy Base
In a large bowl, combine:
Cream cheese (softened)
Sour cream
Salsa (or tomatoes)
Half of the shredded cheese (¾ cup)
Lime juice (if using)
Mix until smooth and creamy.
4. Combine Everything
Add shredded/cooked chicken and sautéed peppers/onions to the creamy mixture. Mix until well combined.
5. Bake
Spread the mixture into the prepared baking dish.
Top with remaining shredded cheese.
Bake uncovered for 20–25 minutes, or until bubbly and golden around the edges.
6. Garnish & Serve
Let cool slightly before serving.
Top with cilantro, jalapeños, or avocado if desired.
Serve alone, over rice, in tortillas, or with tortilla chips!
