Ultimate Creamy Vegetable Soup

Ingredients

Vegetables

  • 2 tbsp olive oil or butter

  • 1 medium onion, diced

  • 2 garlic cloves, minced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 1 cup potatoes, diced

  • 1 cup cauliflower florets

  • 1 cup broccoli florets

  • 1 cup corn or peas (optional)

Liquid Base

  • 4 cups vegetable broth

  • 1 cup milk or cream (or half-and-half)

  • 2 tbsp flour (for thickening)

Seasoning

  • 1 tsp salt (or to taste)

  • ½ tsp black pepper

  • 1 tsp dried thyme

  • 1 tsp dried oregano

  • ½ tsp paprika

  • Fresh parsley for garnish


Instructions

1. Sauté the veggies

Heat olive oil in a large pot. Add onion, carrots, and celery. Cook 5 minutes until soft.
Add garlic and cook another 30 seconds.

2. Add potatoes & broth

Stir in potatoes and all seasonings.
Pour in vegetable broth.
Bring to a boil, then reduce heat and simmer 10–12 minutes.

3. Add cauliflower, broccoli & corn

Add remaining vegetables and simmer 8–10 more minutes until everything is tender.

4. Make it creamy

In a small bowl, whisk 2 tbsp flour with 3–4 tbsp of milk until smooth.
Pour into the soup.
Add the rest of the milk/cream.
Stir and continue simmering until thick and creamy (5–7 minutes).

5. Garnish & serve

Adjust seasoning, sprinkle with fresh parsley, and serve warm.


Tips for the Best Creamy Vegetable Soup

  • Add a handful of cheddar cheese for a cheesy version.

  • Swap potatoes with sweet potatoes for more sweetness.

  • Blend half the soup and add it back for extra creaminess.
