Mediterranean Ground Beef Skillet

Ingredients
For the Skillet
1 lb (450g) ground beef (lean)
1 medium onion, diced
3 garlic cloves, minced
1 red bell pepper, diced
1 zucchini, diced
1 cup cherry tomatoes, halved
1 cup cooked quinoa or brown rice (optional but great for a meal)
2 cups fresh spinach
¼ cup kalamata olives, sliced
¼ cup crumbled feta cheese
Mediterranean Seasoning
1 tsp paprika
1 tsp dried oregano
½ tsp cumin
½ tsp chili flakes (optional)
Salt & pepper to taste
2 tbsp olive oil
Juice of ½ lemon
Instructions
Brown the Beef
Heat 1 tbsp olive oil in a skillet. Add ground beef, season with salt & pepper, and cook until browned. Drain excess fat if needed.Add Aromatics
Add onion & garlic. Sauté 2–3 minutes until fragrant.Add Veggies
Stir in zucchini, bell pepper, and cherry tomatoes. Cook for 5–7 minutes until softened.Season
Add paprika, oregano, cumin, and chili flakes. Mix well.Add Spinach & Olives
Toss in spinach and olives. Cook just until spinach wilts.Finish With Lemon & Feta
Turn off heat. Drizzle olive oil and lemon juice. Sprinkle feta over the top.Serve
Serve as-is, with quinoa, brown rice, or in lettuce wraps.
