Mediterranean Honey Cranberry Chicken Bake with Caramelized Brussels Sprouts, Sweet Potato & Butternut Squash, Carrot Feta, Walnuts, and Cranberry-Honey Glaze
Ingredients (4–5 servings)
Chicken
4–5 chicken thighs or breasts
2 tbsp olive oil
Salt & black pepper, to taste
1 tsp paprika
1 tsp garlic powder
1 tsp dried oregano
½ tsp cumin (optional)
½ tsp chili flakes (optional)
Vegetable Medley
1 cup Brussels sprouts, halved
1 cup sweet potato cubes
1 cup butternut squash cubes
1 cup carrots, sliced
1 tbsp olive oil
Salt & pepper
½ tsp oregano
½ tsp garlic powder
Mediterranean Add-Ins
½ cup dried cranberries
½ cup crumbled feta
¼ cup chopped walnuts
Fresh parsley (for garnish)
Cranberry-Honey Glaze
⅓ cup honey
¼ cup cranberry juice or water
2 tbsp balsamic vinegar or apple cider vinegar
1 tbsp Dijon mustard
1–2 tbsp olive oil
2 garlic cloves minced
Pinch of salt & pepper
Instructions
1. Prep the Chicken
Preheat oven to 400°F (200°C).
Rub chicken with olive oil, paprika, garlic powder, oregano, cumin, salt, pepper, and chili flakes.
Let marinate for 10 minutes (or more if you can).
2. Season the Veggies
In a bowl, toss:
Brussels sprouts
Sweet potato
Butternut squash
Carrots
Olive oil
Salt, pepper, garlic powder, oregano
Spread around a baking dish.
3. Make the Honey Cranberry Glaze
Whisk together:
Honey
Cranberry juice (or water)
Vinegar
Mustard
Olive oil
Garlic
Salt & pepper
Taste and adjust sweetness or tanginess.
4. Assemble the Bake
Place seasoned chicken on top of the vegetable layer.
Drizzle half of the cranberry-honey glaze over everything.
Scatter dried cranberries around the pan.
5. Bake
Bake for 25 minutes, then drizzle the remaining glaze.
Bake another 10–15 minutes, until chicken is caramelized and veggies are soft.
Optional: broil for 2–3 minutes for deep caramelization.
6. Finish & Serve
Top with:
Crumbled feta
Chopped walnuts
Fresh parsley
