Grilled Chicken & Broccoli Bowls with Creamy Garlic Sauce
Ingredients
For the Chicken & Bowls

2 chicken breasts (boneless, skinless)

2 cups broccoli florets

1 cup cooked rice or quinoa (optional: cauliflower rice for low-carb)

1 tbsp olive oil
-
1 tsp paprika
-
1 tsp garlic powder
-
½ tsp black pepper
-
½ tsp salt
-
½ tsp oregano
-
½ tsp chili flakes (optional)
-
Lemon wedges (for serving)
Creamy Garlic Sauce
-
½ cup Greek yogurt (or sour cream)
-
1 tbsp mayonnaise (optional for richness)

1–2 garlic cloves, minced
-
1 tbsp lemon juice
-
1 tbsp olive oil
-
Salt & pepper to taste
-
1 tbsp water to thin (if needed)
Instructions
1. Prepare the Chicken

Slice chicken breasts into cutlets or strips.

Rub with olive oil, paprika, garlic powder, salt, pepper, oregano, and chili flakes.

Grill on a grill pan or outdoor grill for 5–6 minutes per side, until cooked through.

Let rest, then slice.
2. Cook the Broccoli

Steam or sauté the broccoli for 4–5 minutes until bright green and slightly crisp.
OR toss in olive oil + salt & pepper and grill for smoky flavor.
3. Make the Creamy Garlic Sauce

Mix Greek yogurt, mayo, garlic, lemon juice, olive oil, salt, and pepper.

Add a splash of water for a smooth, pourable texture.
4. Assemble the Bowls
-
Add cooked rice/quinoa to the bowl.
-
Top with grilled chicken slices and broccoli.

Drizzle generously with the creamy garlic sauce.

Add lemon wedges on the side.
